Quick Pickle Red Onions

Have to love these little guys. They really are quick and will stay in your fridge ready for a long time. They turn a vivid, bright and happy shade of pink, and are wonderful to snack on or for salads and sides. They are great tucked into sandwiches or bbq-ed meats like pulled pork, and are great in grain salads.


  • 1 red onion
  • 3/4 red wine vinegar, apple cider vinegar or white vinegar
  • 1/2 teaspoon of sugar
  • 1/2 salt
  • (Optional)Additional flavorings like: 1 small clove garlic, 5 peppercorns, thyme sprigs, 1 small dried chili

Slice onions to 1/4 inch thick. I like to slice them in circles so that when you pull them out they have that nice ring pull out of the jar. Bring water to a boil in a kettle.

 In the container you will be using to store the onions, add the sugar, salt, vinegar, and flavorings. Stir to dissolve.

Place onions in a mesh bag or strainer and slowly pour boiling water evenly over the top of onions to par blanch them. Drain them well before placing them into the jar with vingaer and other flavors if you are using. Stir gently to mix with flavors.

Onions will be ready in 30 minutes but the best in a few hours. They will keep for a few weeks in the refrigerator but are best within the first week.
