Lemon Garlic Chickpeas

I personally love chickpeas. They are the best and are such an easy go to in these upcoming hot summer months. They are also insanely good for you when you start your training or are being super active during the summer.

Containing high amounts of protein, you are looking at the same amount of a piece of chicken or meat without the fats and without that overly full feeling.

They are also a killer for any muscle cramps and muscle fatigue with high amounts of Magnesium. It also helps with energy production making this a go to during marathon training.

This is a quick and easy recipe that takes no time and will taste amazing as a salad, to stuff into a tortilla or to eat on its own.


  • 2 cans of chickpeas (Drained and rinsed)
  • 2 medium shallots (Thinly sliced)
  • 1/4 cup olive oil
  • 1 tsp lemon zest
  • Juice of one lemon
  • 1 tbsp feta or goat cheese
  • 1 scallon or handful of parsley for garnish

In a blow toss together chickpeas, shallots, olive oil, lemon juice and lemon zest.

Garnish with scallons, cheese and parsley and serve.

Easiest summer dish you will ever make!
